Well, “The Victory Garden Cookbook” is a gem. Last evening when I wanted ideas for preparing parsnips, I decided to follow author Marian Morash’s counsel, simply slice the parsnips thin and saute them in butter (salt and pepper to season). They were yummy, simple, and much appreciated by the friends who shared them!
